NEWS VIEWS AND COMMENTARIES December 4, 2011

Great news...Thou Shalt Not Salt is being officially launched tomorrow (Monday December 5) at Hair of the Dog on Church street (Toronto) from 5 to 8pm. My 'no to low sodium' cookbook is available at Amazon.com, Chapters/Indigo.ca and Volumesdirect.com

There have been a few glitches at Amazon and Chapters/Indigo online book sites pertaining to my book...wrong info, no price etc. I have been assured these problems are being ironed-out.

Exciting news to share...my latest book is out: Thou Shalt Not Salt...A low to no sodium cookbook. Exciting healthy, no nonsense recipes that are deliciously flavored and easy to prepare. It is available as of November the 14, 2011 on Amazon.com and Indigo.com.  Putting out a book is quite the process.  I am thrilled to finally see it in print.

Getting a book out to be ready for the fall of this year makes for busy, busy times.

I was thinking about the aphorism...radiate!  To do this means to consciously choose

I was in two health stores this week...many bread companies advertise their products as going health concerns: no preservatives, no glutens, no sugar, no fat and yet this so-called healthy bread is loaded with 'salt'.  Why such high amounts of sodium in bread? I have found 2 companies to date that make no salt bread...yeah! The bread is tasty.

More and more products on the market are 'sodium' conscious...reduced sodium is becoming a buzz word even.
I notice on the Food channel that most chefs are big salters...it appears that they have not heard that too much salt is unhealthy...some throw in so much salt that it makes up the sodium quota (USA 1500 mg of sodium per day) for several days...and thatis in one meal.  Hello!!!

Going away for approx. 8 days this coming week...yes, a 'holiday'. I nearly forgot what that
was all about.  Travel refreshes and inspires and uplifts...it is the 'change' that is the real magic,
the displacement, motion and new surroundings.  All this makes for  healthy renewal...fill the
gas tank up Ma...ring the bell Pa we are VACATIONING!!!!!

Mothers' Day. Blessed be all mothers.

I finally found a bakery in Toronto that puts out bread with NO sodium in it.
Wow! That is something...there are few to no commercial bakeries who
provide a low sodium bread...the ones who advertise 'reduced salt'  still
have too much salt in the bread...the no sodium bread I bought tastes great...you
don't get that 'salty' taste.

Kensington Bakery is the name of the bakery...Dufferin/Bloor street area.

I realized the other day that our culture actually must OD on sodium.  An average slice of bread is loaded with 200 mg of salt...hello! Remember the official amount of sodium recommended in the U.S. is 1500 per day. 
So two slices makes 400 mg...imagine young people who eat this stuff.
Fortunately we are gradually becoming aware of how much sodium we consume...the worse is in prepared and processed foods...restaurants too. 
It is important that we demand less sodium in our foods...forget the lame assumption that gobs of salt are in use to preserve food...or that no salt equals bland or tasteless meals...it is time to change, get rid of such false and mindless assumptions.

Change is in the air, Spring is slowly coming to life that sure feels good.
Have you ever notice how one thing leads to another...when I first had to watch my sodium intake that got me
into creating recipes that were salt free.  The more I eperimented with
low to no sodium meat or vegetable dishes, breads, pickles and chutneys
the more I turned into a foodie...love cooking, love inventing new recipes and now sharing what
I am learning.

A new month already, Spring is here and changes are manifesting at a rapid and
I mean FAST pace.  It looks to me like 'ours' is to ride the wave, adapt, change
and work with 'what is' because that is what is. 

Sodium: Many so-called 'healthier' foods are laced with ridiculous amounts of
sodium...I look forward to low sodium commercial bread...bread manufacturers
have not caught on to holding back on sodium.  Some bread companies feature
umpteen grains, advertise that the bread is great for kids and they go ahead and
add even more sodium to the bread....hello! What is that all about.

It is up to the average person to demand low sodium products....ask and we will
receive...you may have to demand it.

I have been working on a low to no sodium recipe book replete with original recipes for about two years.
The book will come out this year, exactly when, I am not able to say presently.  Love creating, inventing low
to no sodium recipes; tasty, delicious and nutritious recipes.  The challenge is extremely exhilarating.

What a week it has been for the world at large...a mind boggling earthquake and tsunami
in Japan followed by a nuclear disaster in the same area...hello! Revolution and riots in the middle
east and this is just the beginning folks...wow! Batman, what's it all about...CHANGE BOY, CHANGE!

By the way today is a full moon, a super moon on top of that...this makes for interesting activity in the coming
weeks. 

For Foodies:
The following is an economical and versatifle way to cook chicken.  You boil the whole chicken...I love
boiling a chicken.  First, wash the bird in cold water then preferably place the chicken in a big glass or ceramic bowl...pour white vinegar over the bird and some cold water to cover the bird...wash it well in and out and the
give it a final rinse with cold water...this little procedure gets rid of bateria and gives the chicken a lovely flavour.

Place the chicken in a big pot and cover the bird with cold water.  Add rough chopped celery (2 sticks), one
big carrot and a white onion, all roughly chopped.  Create a bouquet of fresh thyme, rosemary and a big bunch
of parsley...tie with string and add to the pot...don't forget the bay leaves, two or three will do.  Bring it all to
a boil then lower to simmer and let it do its thing for about 2 to 3 hours.  Once it is cooked take the chicken meat apart and store in a container for later use. 

You now have lovely chicken broth and you can use the chicken meat in so many ways, for example you can make chicken sandwiches, curried chicken or chicken fried rice etc...what I love about this is that it is economical and so versatile.

Today marks a new beginning...planet Uranus enters the sign of Aries...it will remain in this fiery sign for
seven years.  Uranus: revolution, war, surprises, change and transformation...lots of changes...looks like
mother earth is in for a big major workout.

Keep an eye on this blog for 'low sodium to no sodium' news, no salt recipes and more. 

SALT-O-RAMA

Let's face it, salting food like there is no tomorrow is a practice that has become mindless and unhealthy.  Finally there is a growing salt reality check going on in our midst, a realization that we consume way too much sodium.

The popular assumption in the populace is that 'no salt' spell 'no taste' which of course is false. A lack of imagination and know-how makes for bland tasteless food not the lack of salt and for the most part salt overload merely masks the food which is fine if it is bad birdy num-num. Remember, fresh food needs no masking.  

Think of all the wonderful spices and herbs in the world that can be used to jazz-up any and all cuisine, maybe even give it that haunting taste-note and render it memorable

Imagine, Health Canada has new guidlines to cut average daily sodium intake from 3,400 mg down to 2,300 mg by 2016. (why the long wait?) Stay tune for more 'salt' issues in my weekly commentary.

New Month, New Website, Blog Site and Online Boutique

Spring is approaching rapidly...love it. I have not been posting much to my blog site because I was waiting
for my newly revised, designed web site to be ready and up...also wanted the ONLINE BOUTIQUE to be working and it is.

I can now put out weekly comments on this blog site, give out one new 'aphorisim' (saying) and also give out
food tips, recipes and more.

Tomorrow I will put up a new aphorism.
